One Minute Muffin in a Mug for Kids(and Moms)

Let’s face it.  Some mornings you just can’t quite cope with breakfast for a large crew of children. Maybe you were up multiple times during the night with a newborn, maybe one of your children is sick, or maybe you are sick.  Maybe you just couldn’t put down that great novel because we all know the only time you have to read is the middle of the night.  Or maybe you’re feeling just fine, but one picky child just won’t eat the breakfast you’ve prepared and you aren’t up for a fight.

Regardless, morning has arrived and you’re weary.  The idea of feeding the kids cereal is tempting, but you know if you take that route they’ll all be hungry again in an hour and you’ll be back at square one.

Here is where the One Minute Muffin in a Mug comes in handy.  And this version is perfect for kids.  A little carbs, a little protein, an egg, and some fruit if you like.  I’ve even made it with chocolate chips for a treat!  I also have altered it so I can make it for myself without the egg and less carbs(BTW I love eggs but they give me trouble).  Oh, and it’s gluten free.  Did I mention we are gluten and mostly dairy free?

Muffin in a Mug for Kids(and Moms)

1 egg(mix well first in mug)**
2 T brown rice flour(I grind my own flour using this)
1 T almond flour
1/4 tsp baking powder
pinch of salt
1/2 T coconut sugar
pinch of cinnamon(optional)
1 T olive oil(or melted coconut oil)
1 T frozen blueberries(or other diced fruit or chocolate chips)

Directions:

Beat the egg up well in the mug.  Add the other ingredients except the fruit or chocolate chips and mix well.  Add the fruit or chocolate chips and mix again.   Microwave for 90 seconds.  Serve.  Repeat for multiple children.

This makes 1 very large muffin.

Mom Version

1 egg(mix well first in mug)**

1 T olive oil(or melted coconut oil)
1 T frozen blueberries(or other diced fruit or chocolate chips)

Directions:

Beat the egg up well in the mug. Add the other ingredients except the fruit or chocolate chips and mix well. Add the fruit or chocolate chips and mix again. Microwave for 90 seconds. Serve.  Don’t Repeat(go eats more protein, fruit, or veggies).

**To make this a vegan no-egg version simply replace the egg with 1 T ground flax seed with 2 T water.  It will not rise as much but I still enjoy it.
